Okra Fritters

(serves 4-6)

1 lb okra
½ onion
½ cup water
1 egg, beaten
1 tsp salt
½ cup flour
½ cup corn meal
1 tsp baking powder
Oil for frying

Finely chop the okra.  Use a food processor at your own risk. Certain varieties of okra are better for hand chopping. We recommend the short fat ones (Red German) for the food processor.

So, finely chop the okra and the onion.  Mix with the water and the egg.  Sift together the dry ingredients and add to the okra mixture.  Put a heaping tablespoon of batter into hot oil (medium-hot heat) and flatten to make a little patty.  Fry 2-3 minutes per side, until crispy.
